How to Make a Simple Baby Kale Smoothie (For Students!)

Hey everyone!

During the summer when a scorching day comes along I’m looking for everything and anything cold and refreshing, especially if I’m not near a pool. My go-to drinks during these days are either fruit-infused water or… smoothies! This smoothie can be made year round but I love it during the summer months as it tastes so fresh and the coconut in it reminds me of beach holidays. The great thing about smoothies is that you can change them and make them personalized to your taste buds therefore the following recipe is what I found to taste best for me (and for my family as well apparently!).

 

Summer Baby Kale Smoothie

Ingredients

  • 2 handfuls of baby kale
  • 1.5 cups of frozen pineapple chunks (add more if you want the smoothie to be sweeter)
  • 0.5 cup of frozen strawberries (again add more if you want it to be sweeter)
  • 1/4 of an avocado
  • Coconut water (as needed to get a smooth consistency)
  • Lemon juice (squeeze fresh lemon as needed for taste)

Blend the ingredients together until smooth! Top with coconut flakes and hemp hearts… maybe even some chocolate shavings if you’re feeling indulgent!
