How to Make Carrot Cake

Hey guys!

Yesterday was my friend Meadhbh’s 21st birthday, so I (along with my two friends, Jen and Baz) decided to surprise her with carrot cake (which is her favourite!). I will be posting another video shortly which shows how we decorated the cake and the night of the surprise so stay tuned!

 

Carrot Cake Recipe (from Canadian Living)

1.Peel and grate carrots 2 cups of carrots.

2. Mix together dry ingredients

  • 2 cups of all-purpose flour
  • 2 tsp baking powder and 1 tsp baking soda
  • 2 tsp cinnamon
  • 3/4 tsp salt
  • 1/2 tsp nutmeg (we didn’t include this)

3. In a separate bowl, beat wet ingredients

  • 3 eggs
  • 3/4 cup vegetable oil
  • 1 tsp vanilla
  • 3/4 cup of granulated sugar & 3/4 brown sugar

4. Combine wet and dry ingredients, mix until just wet. Add grated carrots and 1 cup drained, crushed pineapple.

5. Preheat oven to 180 degrees Celsius. Grease your pan and add the batter. Then pop in the oven for 40 minutes! Make sure to do the cake test; dip a toothpick into the cake, if it comes out clean (no residual batter) its done!
