Coconut Cupcakes for my Sister’s Birthday

My sister Sophia celebrated her 12th birthday last week, so of course I was in charge of making the cake! I decided on cupcakes, and I thought I’d share this recipe with you as they turned out delicious. :]


















White Cupcakes with Coconut Cream Frosting

makes 12 cupcakes

The Cupcakes:

  • 1/2c butter
  • 1/2c sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1c whole wheat flour
  • 1/2c white flour
  • 1 3/4 tsp baking powder
  • 3/4c Almond Breeze almond coconut milk

The Frosting

  • 8oz Neufchatel cream cheese
  • 1/2c powdered sugar
  • about 1/4c lite coconut milk
  • 1 tsp vanilla extract
  • 1/2c unsweetened coconut flakes



  1. Preheat oven to 350 degrees F (175 degrees C) and line a muffin tray with baking cups.
  2. Beat butter and sugar in a large bowl until light and fluffy. Add eggs one at a time, and blend in with butter mixture. Beat in vanilla extract with last egg. Combine flour and baking powder, and add to butter mixture, mixing well. Stir in milk until batter is smooth. Pour or spoon batter into muffin tins.
  3. Bake cupcakes for 20-25 minutes.
  4. For the frosting: whip cream cheese until it’s fluffy, then slowly mix in the sugar, vanilla extract, coconut milk (use enough to get the correct frosting consistency), and coconut flakes. Then frost cupcakes when they’re cool.
