My Chilli Recipe :)

So last night I made the most delicious chilli ever and I thought I’d share the recipe with you because…..well, because it was delicious! :] So here you go:

LYDIA’S AMAZING CHILLI ;]

Ingredients:

  • an onion
  • garlic
  • 2 tins of chopped tomatoes
  • 1 pack of mince beef or Quorn mince (which I used cuz it was on special at Tesco)
  • 1 tin of kidney beans
  • mixed veggies
  • salt
  • Italian seasoning
  • Fajita mix (yes I used the one that we got in our “welcome to uni” packs haha)

Directions:

  • Chop the onion and garlic and cook in a pan until golden brown.

  • Add in the frozen veggies–as much as you want really.

  • Next, add the chopped tomatoes.

  • Then add the mince (although if you’re using real beef, you’ll have to cook it before hand–I didn’t have to because I used Quorn)

  • Then add the kidney beans.

  • Stir everything together, add Italian seasoning, salt and fajita mix to taste, and then let simmer for about ten minutes or until the tomatoes have cooked down a bit.

  • Serve topped with cheese! (Because who doesn’t like cheese)

Voila! This makes A LOT of chilli–I think it’s definitely going to be my dinner for the next couple days but it’s really good so I don’t mind. Hope you guys enjoy!

 

Finding Somewhere to Live For Second Year

After only having been in Sunderland for about 3 months, I had to start thinking about where and who I wanted to live with next year, which, let me tell you, IS ACTUALLY VERY STRESSFUL. Everyone seemed to be trying to rush into getting houses, convinced that there’d be no where to live if they didn’t figure something out ASAP, and I was just sitting there like “BUT I DON’T EVEN KNOW WHO I WANT TO LIVE WITH.” I did go see about four different houses in different parts of Sunderland–and out of those there was really only one nice one. The first house we looked at had mold everywhere, not to mention the landlord was a bit sketchy. :/ So after looking over ridiculous contracts (one place expected us to keep the hedge and grass in front of the house trimmed!) in the end, I talked to some of my friends and we decided that we’re just going to stay at Panns again next year. It’s a reasonable price, all bills are included, it’s close to uni, and plus I still get to live with my friends. :] Also there were some good earlybird offers for applying in December and January. For the most part I really like living in halls, so if anyone has any questions about what living in Panns is like, don’t hesitate to ask! And actually, I’ll do a tour of my flat and post it here within the next couple days–as I think the flat’s pretty clean right now. :]

My First Birthday in Sunderland!

Well, not my first  birthday obviously, as I turned 19, but my first one in Sunderland and away from home. Due to the freezing cold weather we’ve been having recently, there was snow! =D So really, it was a bit like being at home. My birthday was on Sunday, so on Saturday night I went out with a few friends, had some drinks, and it was a really good night from what I remember. ;]  We went to Revolution for some cocktails and then a place called the Beehive, and then we went to Passion for a bit. :] My family also sent me birthday cards and a phone case, so it was all-around a good birthday. :]

Christmas Break

It’s unbelievable how the three weeks of break just flew by! Considering I was staying in Sunderland over Christmas, I thought it might drag on a bit due to the lack of things to do, but as it turned out I was pretty busy. :] Basically my break consisted of the following:

  • being ill for about a week–not fun! :[
  • cleaning the flat
  • going to stay with my friend Katie and her family in Leeds for Christmas
  • going to see Nativity 2 at the cinema on Christmas Eve while wearing a wolf onesie (I still need to get myself a onesie as they are literally the most comfortable things ever)
  • eating lots of food :]
  • getting Christmas socks and a stuffed reindeer and some other lovely presents :]
  • going to see my friend Phil in Huddersfield
  • drinking lots of tea
  • getting a winter hat
  • going ice-skating with my friend John at the outdoor rink in Newcastle
  • going out in Newcastle with a bunch of friends for New Years! Absolutely amazing night. =D
  • doing work in my sketchbook
  • having a movie day with my friend Stuart
  • going out with some friends on rock night

And I think that about sums it up! It was definitely weird not being at home, but I had a great Christmas anyway.

Hope everyone’s had a good break and is ready to get back to uni!
