Super Healthy Banana Bread Muffins

Being a student on a tight budget means that I usually try my best to not let the food I have go to waste….so when I have two bananas that are too brown and ripe to be edible, what do I do? Make muffins of course! These taste much different than your typical banana muffin because they’re super healthy and don’t have oil or even flour–although that’s because I only had oats to use haha–in them. But they were still delicious! So if you want to give them a try here’s the recipe–chances are you’ll have everything you need in your cabinet:

-1 egg + 1 egg white

-4 T (or more if you like sweeter muffins!) sweetener or sugar

-1 1/2 cups oats (if you have flour you can substitute that for some of the oats)

-2 bananas

Also, I didn’t use any, but you could take out the egg white and add 1-2 T oil and I think it would make a less “healthy” tasting muffin–but I didn’t do that so if it turns out terrible don’t blame me! =P

Basically, just mix them together and put them in muffin cups then pop them in a 200 degree oven for 15-20 minutes and voila! Eat up. :]

Christmas in Flat 20!

On Monday our flat had our Christmas dinner (thanks to Catherine who cooked it all and it was delicious!) and Secret Santa. :] I just put together a video of the night, Merry Christmas and happy holidays from Flat 20. :]
