Chilli Con Carne Recipe

Tuesday, April 7th, 2015

This recipe below will easily make 2 servings so just adapt the recipe to suit you.

250g Beef Mince/Quorn
1 tin of Chopped Tomatoes
1/2 Large Onion
1 tin of Kidney Beans
3/4 Tablespoons of Hot chilli powder
2 Fresh Chilli’s (Red/Green)

Prior to preparing your ingredients it is useful to have the slow cooker plugged in and ready to use so that food can be transferred easily!

1. Finely chop or dice 1/2 Onion, and warm the frying pan with a little oil to prevent anything sticking to the pan.

2. When the pan is hot pour in the Onion and add the entire packet of Beef Mince/Quorn.

3. Fry for 4/5 minutes until Mince browns and Onion softens, at this point I sometimes add Garlic powder (optional). When browned transfer directly to slow cooker.

4. Open the tin of Chopped Tomatoes and pour directly into the slow cooker and stir to mix with the Mince and Onion.

5. Open the Kidney Beans and use a colander to drain excess juice, then pour the Kidney Beans into the slow cooker and stir.

6. Sprinkle 3/4 tablespoons of Hot Chilli powder into the slow cooker and mix through the contents of the pot.

7. Chop/dice the fresh Chilli’s and add to the slow cooker. You can choose to add the seeds into the pot but this will make the chilli even spicier. (Make sure to wash hands thoroughly after handling the Chilli’s, it can be a painful experience if you forget and rub your eye!).

8. Choose the appropriate heat for the time you have to cook:
Low: 8/9 Hours
Medium: 5/6 Hours
High: 3/4 Hours

* The longer and slower the contents cook the better it will taste *

Serve with: Nachos, Rice, Pasta, Garlic bread or on it’s own!

Enjoy, Lau x
