Clearing out ! Last week in Sunderland

So its been a great week, I’m home to Dublin now.

It’s amazing how much one can acquire over 3 years abroad(see pallet below)

maybe its just the artist side, where everything is collected and never thrown away no matter how obscure it may look ! Assessments went great, and my new work I’m very pleased with the final outcome. A few days off at home and then straight into work progressions, studio set up and residency applications . Looking forward to following the new bloggers ! what a year its been !

update where my work is at

So artwork  is well under way, I discovered a new frontier with my work, it was all go last week !

the professional development guidance has really helped me to figure out a market for my work and a possible post graduate study program. This will be my degree show work, it’s all about a new process creating a new landscape, the work is modular and I’m finding myself moving more and more towards a fine-art perspective.

Here is a video about how I have been going about my work within ceramics, the first design to the now final outcome above can take many months to piece together !

But It’s such an enjoyable journey, testing my own process, the fails and the success all come together to realise something wonderful.

Meal of the week ! feta sweet potato and spinach quiche (gluten free)

So I’ve been looking for cheap Healthy delicious meals to cook, that can last a day depending on how Hungry I am !

This meal is just delicious, costing just under 5 quid for a large dish and yet so easy to cook !

2 teaspoons olive oil

1 red onion, cut into thin wedges

1 garlic clove, chopped

3 large  sweet potatoes, peeled and cut into 1 . 5 cm cubesa)

2 1/2 cups baby spinach leaves, I used 150grams (measure firmly packed)

1 cup milk

6 eggs

one pack of  feta cheese, crumbled

fresh ground black pepper

1/4 cup grated parmesan cheese or cheddar cheese !

Grease a large glass dish, approximately 25-27cm in diameter.

Heat the olive oil in a large non-stick frying pan, add onion and garlic and cook for 1 minute, watch it doesn’t burn !.

Add sweet potato and cook over moderate heat, stirring occasionally until golden brown, this should take about 10 minutes.

Add spinach and cook, stirring 1 minute until spinach is wilted. Cool.

Add feta cheese, stir to combine and place into prepared flan dish.

Beat the 6 eggs in a large jug with milk, salt and pepper and pour over vegetables in flan dish.

Sprinkle with parmesan cheese ( I added pine nuts, optional i guess ! ) and and bake in a moderate oven 180°C 35-40 minutes until puffed and golden.

Allow to stand for 5-10 minutes before slicing.

De-liscious !
